The festive season in India is a time for celebration, religious devotion, and indulging in a variety of Indian sweets. Festivals are the perfect excuse to forget about diet plans and enjoy a well-deserved cheat day. Indian desserts hold a special place in the world of confectionery, known for their rich flavours and delightful textures. These sweet treats not only taste amazing but also reflect India’s rich cultural and culinary heritage. What’s even more special is when these delectable desserts are infused with the captivating essence of saffron (kesar). So, put on your chef’s hat, and let’s dive into these irresistible saffron-infused sweet recipes.

Ingredients:

  • 1 kg plain yoghurt
  • 3/4 to 1 cup caster/powdered sugar
  • 3/4 to 1 tsp powdered green cardamom seeds
  • 6-5 saffron strands soaked in 2 tbsp of water
  • Cheesecloth

For garnishing:

  • Almond flakes
  • Crushed pistachios
  • Dried rose petals

Method:

  • Line a deep bowl with cheesecloth and place a strainer on top.
  • Pour yoghurt into the cheesecloth, gather the cloth’s sides, and lightly twist it to aid in draining.
  • Put the bowl in the refrigerator and let it drain overnight.
  • The next day, transfer the thick yoghurt to a glass bowl.
  • Use an electric beater or hand whisk to whip the yoghurt for 2 minutes.
  • Add half of the sugar and continue whipping until it dissolves. Adjust sugar to taste based on yoghurt sourness.
  • Add crushed cardamom seeds and saffron with its soaking water. Whisk until well combined.
  • Spoon the yoghurt into glasses and refrigerate until ready to serve.
  • Garnish with almond flakes, crushed pistachios, and rose petals.

Ingredients:

  • 1 pack Salt Biscuits
  • 1 tbsp Sugar
  • 2 tbsp Melted Butter
  • 1 tsp Saffron (around 2 grams)
  • 2 tbsp Hot Milk
  • 200 g Cream Cheese
  • 100 g Kova/Mawa
  • 3/4 cup Powdered Sugar
  • 1 cup Whipped Cream

Method:

  • Firstly, put salted biscuits, sugar, and melted butter into a food processor and mix it well until they form crumbs.
  • Now, press this crumb mixture into cupcake liners and it while you work on the base.
  • In another small bowl, take cream cheese and beat it until it turns creamy.
  • Add kova and beat it again until it’s thoroughly combined with the cream cheese.
  • Add powdered sugar and mix well.
  • Gently fold in whipped cream until all the ingredients are perfectly mixed.
  • Add the infused saffron milk and fold it in gently.
  • Fill the cupcake liners with this mixture, and top them with pistachios and saffron.
  • Chill the cupcakes for 2 hours, and they will be ready to serve.
